Might be trouble with the gauge or the temperature sensors themselves. I'd suspect the sensor.

If your still having an over heating issue, try to get a thermostat that opens a a little bit of a lower temperature, the usual should be 190 but the one i put in my prelude is i think 175 and it runs at half the heat gauge. not issues.

Sounds like the water temperature sensor (sender). The one that looks like a headphone Jack.
