Adding some color to an interior can look good if it is done properly. I can't give you any suggestions about colors and such, but I've seen this done a few times and can comment on what I've seen.

Be careful with your paint selection. Almost every time I've seen someone put white paint in their interior it has yellowed from sun damage in a very short time. Other colors don't seem to do this. Not sure why. Be sure to pick a paint that goes on well, and won't chip or scratch easily. A heavy paint like tremclad or something similar would be a bad choice. You might try using the spray bombs that scale modelers use as they spray a very fine layer on. Again, be aware that sun may damage a lot of paints.

I don't know whether exterior paint would be worse for your health than other paints. As with any chemical, you should be extremely careful. Aerosols contain known carcinogens, so if you can paint and dry the part outside of the car, I would do it. Wear a respirator if you can. There's some scary stuff in a lot of the products we use for our hobby.

Engine painting is fun! I've done my valve cover and heat shield and I think it made things look a lot better. Choose a heat tolerate paint (easy to find). Engine paints come in a lot of different colors. Stay away from paints that give the 'anodized' look. In my experience, these never hold their color no matter what temperature the bottle says they can withstand.
